Chicken Alfredo Pasta
Simple Ham, Avocado & Spinach Sandwich
Shrimp & Tofu Stir Fry
Ingredients
1/2 an onion (sliced)
3 cloves of garlic (chopped)
1 Lb Green Beans
2 Bell Peppers
Package of shrimp (peeled & deveined)
1/2 Lb of tofu (chopped into cubes or slices)
1/3 cup of low-sodium soya sauce
1 Tbsp of coconut oil
Pinch of salt
Pinch of black pepper
Pinch of garlic powder
Pinch of red chili flakes
Directions
1. Heat up a saucepan on low-medium heat. Add a tablespoon of coconut oil. Add garlic and onions. Let sizzle for three minutes while stirring. Add soya sauce.
2. Cook your shrimp and tofu for about five minutes or until shrimp has turned orange.
3. Add vegetables. Stir and let sit for three minutes.
4. Serve & enjoy!

Back in 2014 I began to be super serious about my healthy lifestyle. My first official meal prep is captured above. It was an interesting experience to start but definitely something I've gotten used to after a couple of years.

Farewell Cupcakes
I remember running on little to no hours of sleep while making these. The next morning I rushed to work, sleep deprived, and as I stepped out of my car I discovered that the cupcakes had all fallen over in the box. I started the morning off with lots of tears from frustration. I ended up printing this picture out and giving it to the person I made them for because I couldn't present a perfect batch in front her.

A colleague's daughter requested for some cupcakes for her dad. She said he liked basketball, and is the best dad. They had a successful celebration!

Miami Heat Cake
A good friend of mine told me that her fiancé is a Miami Heat fan, and she needed a cake for his birthday. This was my first real challenge with a cake. They enjoyed it so I'm satisfied!

Simple Garlic Pasta
The quickest and easiest but still tasty pasta you'll ever make!
Couscous Pasta Salad
RECIPE
1 cup of couscous
1/2 red bell pepper
1/2 yellow bell pepper
1/2 orange bell pepper
1/3 parsley bundle
1 cucumber
1 tomato
Kalamata olives (amount depends on you, I like about 20 sliced up!)
Low-fat Greek vinaigrette salad dressing
Pinch of salt
Pinch of pepper
Bring a pot of water to a boil. Carefully add your couscous, and let boil for 5-10 minutes constantly stirring to prevent sticking at the bottom of the pot. Drain any excess water using the bowl to pot method to save all the couscous. Let cool.
As the couscous is cooling, begin chopping up your vegetables. Dice your peppers, cucumber, tomato, and olives. Finely chop the parsley. Once the couscous is cooled, transfer to a bowl. Add all your vegetables, and lightly dress with Greek vinaigrette. Toss all together.
Enjoy!

Pasta with pasta sauce can get boring sometimes. I jazzed it up by adding some pieces of ham, and lots of cheese, then popped it in the oven!

I went apple picking one day with a few friends and had so many apples. Despite the fact that I was living in a household of ten, there were too many apples that were about to go to waste so I went ahead and made mini apple pies!
